Always searched for a real pelmeny receipe. When I was little i read in a fairytale book with russian tales about this, and always wanted to have the receipe...

1. Preparing doughFor 1 kg: of wheat flour - 700 g 2 eggs water - 250 ml salt - 10 g (1 teaspoon)Mix water (slightly warm), eggs and salt. Pour flour on a table. It should look like a volcano: make a crater on a top of this flour hill. Pour the mix into this crater slowly, mixing it with flour constantly. When dough preparing is done, put it under a fabric napkin for 40 min. If it`s too sticky, add some flour. 2. Preparing stuffingbeef or bird - 200 g pork or lamb - 250 g onions (napiform) - 40 g water - about 200 ml salt - 9 g black pepper - 0.2 g sugar - 0.5 gGrind meat and onions in a grinder. Mix with water, salt, pepper and sugar. 3. Pelmeny formingI made some pictures to make it easier to unerstand. Pour some flour on your hands, spreader, table and dough. Spread dough. It should be 1,5 - 2 mm thin. Make circles using a glass. Put some stuffing on each circle. Close it, as shown. It should look like this: Then stick it`s tips as shown. It should look like this: 3. Final stepCook pelmeny in a boiling water for 8-10 minutes (they all should float on a surface in the end). They can stick together in the beginning, so prevent it using spoon. In the end get them out of water, put some butter and serve with sour-cream, vinegar and vodka ;D Bon appetit

Yeah... and don't forget to eat them (pelmeni) while they are hot! Also, you can add soya souce with sour cream (my favorite). Yeah, and when you're putting them on your plate get a spoon or two of the water, they were boiling in. And if there's some of this water in one of them, do not pour it out!

Has anybody heard about Spanish paella? is what every foreigner wants to eat while visiting Spain, specially in Mediterranean zones... it's my favourite dish, but if you come to Spain and eat it, be carefull, it's a dish as good as oftenly bad done. ALthough being a national dish is hard to get a really well done paella.
